(A)(2) and (B) Time/Temperature Control for Safety Food Hot and Cold Holding (P)criticalInspector note: Tofu and other food products located in the open air cooler with slightly elevated temperatures ranging between 49-51F. Address and ensure all TCS foods are being maintained at below 41F. All foods were removed from the open air cooler at the time of the inspection and placed into a walk-in refrigeration unit that was operating below 41F. Technician was on site at that point to make all necessary repairs.

Controlling Pests (Pf)Inspector note: Evidence of what appers to be rodent droppings located on shelves where the candy and crackers are being stored. Address and provide an up to date pest control report for the re-inspection date. Pest control reports were provided at the time of the inspection.

Food Storage Prohibited Areas (C)Inspector note: Boxes of meats and seafood observed being stored on the ground of the walk-in coolers. Discontinue and ensure all food products are being stored elevated a minimum of 6 inches off ghe ground.

Nonfood-Contact Surfaces (C)Inspector note: Open air freezer case not functioning properly. Address and make any necessary repairs. Discontinue use unless the unit is able to maintain all food products solid. At the time of the inspection there were technicians on site make any necessary repairs. Foods were solid at the time of the inspection. Sverla ceiling tiles above the retail portion of the store with what appears to be water damage. Replace.

Nonfood Contact Surfaces (C)Inspector note: Storage shelves where candy and carckers are being stored with what appears to be rodent droppings. Clean and sanitize all affected shelves in store. Small slding glass dessert freezers with sexcess frost build-up. Defrost and clean to remove. Lower shelf of the open air freezer where corn and peas are being stored visibly soiled. Clean to remove. Drip tray to the walk-in refrigeration unit with excess ice/frost build-up. Address make any necessay repairs and clean to remove. What appears to be rodent droppings observed on teh storage shelves and floor of the second level dry storage area. Clean and sanitize to remove all.
