(A )Cooling Methods (Pf)Inspector note: Large stock pot of tomato sauce at 112F. Cook staff stated it had been cooling for two hours. Sauce was reheated to 180F then split into shallow hotel pans. Large quantities should be divided into smaller shallow containers to facilitate proper cooling. Corrected on site.
