Cold HoldingcriticalInspector note: Cooked sausage and egg patties with a temperature of 55-58F. PIC stated that the foods had been placed into the unit approxiamtely 2 hrs prior. Ensure all potentially hazardous foods are being maintained at below 41F. All foods that were out of temperature were removed at the time of the inspection and placed into a unit that is being maintained at below 41F.

Non-Food Contact SurfacesInspector note: Small 4 drawer cooler not operating properly and foods inside with elevated temperatures between 55-58F. Discontinue the using the unit if it is unable to maintain a temperature of below 41F. PIC removed all foods from the unit at the time of the inspection.
