    Inspector note: The hamburgers in the hot holding unit are 118F. The burgers were partially cooked and then stored in the hot holding unit and will be cooked all the way through to order. Provide proper cooking temperatures of 155F and then hot holding of 140F or above. (The manager corrected the issue by having the chef cook all the burgers fully)

    Inspector note: The power wash gauge at the dishwasher is supposed to be between 160-175F The machine is only reaching 140F. The final rinse gauge is fluctuating between 174F - 190F. A high temperature strip was run throuogh the dishwasher three times and it never turned black indicating that the equipment is reaching 160F. Provide proper cleaning and sanitizing of equipment. (The manager stopped using the machine called in a high risk service call and ecolab was working on the machine at the end of the inspection. If the machine is down for any length of time they will switch to paper service)
