Two reach in refrigerators have been added in basement to support menu until walkin is repaired. Flip top unit at pizza station 50F inoperable at time of inspection no food in unit. Two flip top reach in coolers in kitchen one is holding at 47F other 50F as seen on equipment thermometers and cold holding temperatures of TCS foods. All foods in units voluntarily discarded. Business currently does not have enough refrigeration to support the menu.

Controlling Pests (Pf)Inspector note: Rat droppings in front dining room area next to windows on basement floors under shelving and equipment under equipment at bar on floors under equipment in kitchen next to rear entrance opposite walkin cooler under dish machine on roof outside building. Evidence of gnaw marks and entry through previously sealed holes and as noted on the most recent pest control report from Modern dates 7.31.24. Clean and sanitize all affected areas. Provide updated IPM pest control report stating detailed locations of entry points steps taken to remediate and recommendations moving forward. Increase pest control visits as needed to address repeat pest violations. Numerous small and large flies in basement trash room. Treat.

Outer Openings Protected (C)Inspector note: Openings observed in rafters in basement above wall facing street opening observed in wall next to wall AC unit previously sealed opening at bottom of brick wall near kitchen entrance on side of pizza oven with disturbed materials. Pest control report from Modern dated 7.31.24 has stated that previously filled in holes have been re-perforated by rodents and need to be sealed again with pest proof materials. Conduct a full assessment of the building in collaboration with pest control company to identify and seal any and all outer openings to prevent entrance of rats.
