Location AccessiblecriticalInspector note: In the absence of the chef the kitchen staff are utilizing the hand sink in the center of the left kitchen area as a dump sink. The sink was partially clogged with food particles. The sink is for hand washing only and is not to be utilized as a dump station.

Inadequate Facilities/Cooling MethodsInspector note: Four decorative bowls containing pasta tomatoes zucchini and carrots were observed in a cold holding well within the "pasta area." The bowls are set in the center and above the rim of the well. The food product within the bowls were between 40 and 45 degrees F at the start of the inspection. The cold holding well was observed to be operating properly. As configured the unit cannot maintain the product within the bowls at an internal temperature of 41 degrees F or below. The bowls must be replaced with properly fitting pans or other containers to provide proper cold holding.

Food ProtectionInspector note: A case of chicken was observed on the floor of the walk-in refrigerator. Food storage containers must be returned to the shelving once opened. Provide proper food storage at all times.

Non-Food Contact SurfacesInspector note: Water was observed to pool on the floor of the kitchen during the inspection. The source of the water appears to be the beverage unit between the meat and dairy kitchens. The unit must be repaired.

Pre-Flushed Scrapped SoakedInspector note: The inspection was completed on a Wednesday. Soiled dishes utensils and equipment from the previous day (Tuesday) was observed within a walk-in refrigerator. The equipment had been properly marked (blue/dairy) and should have been washed and cleaned in the blue/dairy kitchen the day/evening before. It is BISD's understanding that the soiled dishes utensils and equipment were not washed because of religious observance but because of lack of proper staffing. If this is in fact the case the establishment must provide sufficient staffing to address the issue.

Installed and MaintainedInspector note: The hand sink in the left (meat) side of the main kitchen is partially clogged. Repair.

Improper Maintenance of FloorsInspector note: Food debris was observed along the baseboard of the kitchen floor and around the thresholds to both refrigeration units in the left rear of the kitchen. The floor must be maintained clean.

Premises MaintainedInspector note: The walk-in refrigerator and freezer contained beverage glasses and kitchen knives left by the staff. The items should be removed from the units. If knives are to be utilized to open and/or break down boxes the knives should be promptly removed to the kitchen for cleaning and sanitizing.
