Provide an additional certified food manager who can take active managerial control; train the staff and monitor food safety and health code compliance.

Using a Handwashing Sink-Operation and Maintenance (Pf)Inspector note: At the start of the inspection there was a bowl full of raw chickes stored in the handwash sink. Keep sink clear so employees can wash their hands (the chicken was discarded by the employee in the restaurant and instructed her to keep the sink clear to wash hands) The three bay sink used to clean the dishes is located downstairs and employees were observed rinsing dishes in the handwash sink before they are placed in the bus buckets to be taken downstairs. Eliminate this practice and restrict handwash sinks to only washing hands.
