Non-Food Contact SurfacesInspector note: Oven for pork loins is heavily soiled.This particular oven has its own hood and ventilation system away from the main cooking line.It is located in the rear of the kitchen. There was a smoke fire over the weekend [ due to the carbon builkd up in this particular oven ] causing the boston fire department and the on- call health inspector to inspect the establishment. Fire department has shut off the gas to the oven to ensure it is not to be used.A new oven has been ordered. P.I.C. understands that she needs to contact the health deparment before operating the oven.
