Hot HoldingcriticalInspector note: Vegtable Low Mein in hot holding unit at 118 F. Owner reports low main has been in steam table less that 1 hour. Provide hot holding temperature of 140 F or higher. Low Mein was reheated to 165 F and placed back in steam table for service.

Cold HoldingcriticalInspector note: Cold chicken strips in cold unit buffet at 53 FR. Manager reports chicken strips in cold unit less than 1 hour. Provide cold hold temperature of 41 Fa or below. Chicken strips were chilled to 41 F before being placed back in cold buffet.

Non-Food Contact SurfacesInspector note: Coffin style freezer in kitchen is heavily soiled with food encrustments and soils. Daoor to unit is held together with duct tape. Clean exterior of unit and repair of replace freezer door. Remove duct tape also. Countertop to unit in kitchen that houses a hand sink and prep sink is in a staste of disrepair. Counter top is falling apart and damaged from normal wear and tear. Repair or replace damaged counter top and surface.
