Manual and Mechanical Warewashing Equipment Chemical Sanitization-Temperature pH Concentration and Hardness (P)criticalInspector note: No evidence of proper warewashing. Three bay sink is used for washing and dumping/prep on the other two bays. Sanitizer dispenser (pre-mixed with water) appears out of order and does not dispense any sanitizer level. Perform proper warewashing all the time (wash rinse sanitize). Stop using three bay sink for food prep use prep sink for that.
