PIC stated that they were just cooked and then they were set aside to make a sauce. Spoke to PIC in regards to hot holding beans. PIC reheated the beans to 165F and then separtated the beans and put them on to the steam table to hot hold to 135F or above. Ensure that staff is trained on hot holding procedures.
