Cold HoldingcriticalInspector note: Cooked rice dishes vegetables and chicken inside of the upright refrigerator with an elevated temperatures ranging from 50-61F. PIC stated that the foods had been in the unit for over 24hrs. All foods that were out of temperature were voluntarily disposed and denatured at the time of the inspection. Fish vegetables and meats inside of the coffin style freezer in the basement at 56F. PIC stated that the freezer was not oeprating and they were defrosting it to remove all the foods. PIC to remove and dispose of all foods that were out of temperature inside of the unit.
