PIC Performing DutiescriticalInspector note: Certified Food Safety staff member not at location at this time. Spoke to her one time on the passed on the phone. Please review with all staff members working with food proper holding temperatures and proper way to store food. Also review with staff how to set up three bay sink. Sink had soiled dishes and dishwasher not on. China will need to be washed in dishwasher. Every inspection dishwasher is not in. Staff did not know what test kit to use for sanitizer or guide to match test strip up to.

Wire along wall going down stairs to basement hanging over step. Address amd repair. Provide screen door to back door if you are going to have door open to cool room. If not keep door closed.
