    Inspector note: The central refrigerated service unit located along the cooking line is not functioning. Capital should be reserved so that the unit may be replaced. The new unit should meet current NSF certification requirements. The refrigeration unit to the left of the central service area within the pastry area should also be replaced. It is not operating.

    Inspector note: The drainage line to the dish machine (2nd floor) is leaking. The leak must be repaired.

    Inspector note: Before the refrigeration units are installed the kitchen floor must be resurfaced to eliminate any open seams and open grout lines. The floor must also be leveled. Currently food debris is collecting within the open seams and along the existing floor ridges.
