Using a Handwashing Sink-Operation and Maintenance (Pf)Inspector note: Hand sink in warewashing and prep area blocked with a box going out to the trash. PIC removed.

Hand Drying Provision (Pf)Inspector note: PIC will need to provide paper towels for each hand sink at all time. Hand sink on cooking line did not have paper towels.

Thawing (C)Inspector note: In the sanitizer bay of the three bay sink found chicken in open yellow bags thawing underwater. Bags filled up with water. The wash bay had soiled equipment in it. PIC voluntarily discard in trash bag denautured with bleach and put into dumpster. In prep sink area found red bags of chicken thawing at room temperature. I review with staff proper thawing. PIC will need to review with staff.

Nonfood-Contact Surfaces (C)Inspector note: Clean in place cooking equipment of grease and dust build up. Remove mold caulking on wall behind three bay sink.

Ventilation Hood Systems Filters (C)Inspector note: PIC will need to clean hood filters and hood around filters of grease build up. Hood sticker good until Mid July 2022. Provide New sticker at re-inspection.

Outdoor Storage Surface (C)Inspector note: Back of building found a build up of grease. Gease buckes piled up and some with no lids. Clean back area and propvide a proper holder for grease being dicarded.

Surface Characteristics-Indoor Areas (C)Inspector note: Back door when closed has a small opening. Please provide a door sweep to block this hole.
