Consequently the glass machine was not properly sanitizing the glass or bar wares washed prior to the inspection. BISD primed the unit before the inspection was completed. The unit operated properly after being primed. The low temperature dish machine is not properly sanitizing the kitchen wares. The unit is to be repaired later Tuesday. Wares will be immersed within a quat. ammonia sanitizer set up within the three bay sink before being placed into service. Once the dish machine is repaired this process can stop.
