  Inspector note: There are roasted potatoes cooling in the basement outside of the refrigerator. Provide proper cooling methods to be sure that items cool from 140F to 70F in two hours and then from 70F to 41F in an additional four hours. (manager was able to take corrective actions and get the potatoes on ice to speed up cooling process)
