Manual and Mechanical Warewashing Equipment Chemical Sanitization-Temperature pH Concentration and Hardness (Pf)Inspector note: Low dishmachine at the bar and low dishmachine in the kitchen area (2nd floor) sanitizer is low. PIC and I tried priming the the machines. Contact licensed company to educate PIC and repair the machines. Observed window cleaner stored at the waitress stand. PIC stated they clean the tables with. Provide chemical grade sanitizer for cleaning the tables.

(A) Equipment Food-Contact Surfaces Nonfood-Contact Surfaces and Utensils (Pf)Inspector note: Observed soiled counters mold like substance inside the basement ice machine soiled toliets and sinks. Clean and sanitize. Observed frost build up inside the small 2 door freezer next to the steam table. Remove foods defrost and clean unit. Observed heavy frost build up inside the walk in freezer in the basement. Defrost and remove. Organize walkin and properly store food items a minimum of 6 inches off the floor.

Hand Drying Provision (Pf)Inspector note: No means to dry hands in the bathroom next to the bar and at the hand sink behind the bar. Provide means to dry hands. No signage in the bathroom next to the bar. Provide hand wash signage.

Controlling Pests (Pf)Inspector note: Observed rat dropping on the floor of the mop closet/Storage room (basement) and strong odor. Contact licensed exterminator and provide a detailed IPM report. Please consult with licensed exterminination company and provide a report stating no catches/ no activity/no sanitation issues. Treat and seal any and all potential entry points and structural voids before the next inspection. Increase pest control visits as necessary until issue has been corrected. Continue to submit all reports via email for review. Continue to monitor all areas and clean and sanitize properly. Organize the mop closet/storage room to ensure that the exterminator can access the room and be able to put traps down. PIC provide Feb 20 2025 pest report. Please provide all recent pest reports.

Observed debris on the floor inside all the walk in refrigeration units in the basement. Clean and organize Observed debris and food items under the shelving in the basement storage rooms. Clean and organize.
