(A)(2) and (B) Time/Temperature Control for Safety Food Hot and Cold Holding (P)criticalInspector note: At the cold holding area of the self-service bar observed imitation crab meat at 52F cut bamboo shoots 55F kimchii 54F; the person in charge states the foods had been removed from the walk-in refrigerator at 7:00pm and directed staff to put ice on the foods and in trays under the foods and the foods were at 41F within 30 minutes; the person in charge will contact a repair person in the morning to have the cold holding units at the self-service bar repaired or replaced. Hold TCS foods at 41F or below.

System Maintained in Good Repair (C)Inspector note: Observed the PSI gauge at the high temperature warewashing machine read 30 psi during rinse and settle at 40 psi after rinse and the gauge appears to be full of fluid; repair or replace the PSI gauge so that it reads at the recommended psi during the final rinse cycle.
