    Inspector note: Packaged Buffalo chicken sandwich in retail grab and go cooler with a temperature of 56F turkey club wrap 46F. Roast beef 45F. Sanwiches prepared and packlaged at suffolk miller cafe. Spoke to PIC Mitezzy and explained proper cooling methods. Ensure PHF foods are cooled to 41F or below before being presented for retail sale .Cooler temperature 38F. Other items in cooler within proper temperature range. Sandwiches prepared one hour prior. PIC took immediate corrective action and returned items to walkin cooler with containers open to finish cooling process to 41F or below.
