Provide proper cooling methods to properly cool items from 140F to 70F in two hours and then from 70F to 41F in an additional four hours. (the manager has ordered a blast chiller for the location) The walk-in cooler is opened and closed so frequently during service that the temperature in the walk-in is rising above 41F. Provide enough refrigeration to maintain product temperature.
