Cold HoldingcriticalInspector note: Cold food items being held in prep refridge that isn't working.Tuna at 70F chicken salad at 50F egg salad at 50F.Deli meats and cheeses being held at ambient room temperatures(Ham at 46-48F cheese at 40F-just taken out of upright refridge in back but held without means of temperature control).Stuffing at 52F held on countertop.Large platters observed sitting at room temperatures upon arrival to establishment-various sandwich wraps.Owner and I talked about proper cold holding inside a refridgerated unit until product leaves establishment(reminder:Product must be recieved by customer at 41F).
