Separation Segregation Cross ContaminationcriticalInspector note: A package of noodles spices and sauce containers were set on a small table immediately adjacent to the kitchen hand sink. Proper separation must be maintained between the hand sink and food items. At present the spices sauces and noodles can be contaminated with hand soap and dirty water during hand washing activities.

Food ProtectionInspector note: Several packages of lettuce were observed on the floor of the kitchen during the inspection. Food items should not be stored on the floor. Were the packaging to have any holes or tears the lettuce could be contaminated with soil from the floor. A bag containing lettuce was set on top of several containers of cut vegetables in the flip top unit located opposite the wok station. If the exterior of the bag was contaminated (were it to have been stored on the floor) the soil on the bag could contaminate the vegetables.

Wiping Cloths Clean SanitizeInspector note: The wiping cloths should be properly laundered between uses. If the piping in the basement is not properly cleaned and sanitized the cloths should not be hung to dry on them. Sanitizing buckets should be set up each morning and stored within each active work area. Wiping cloths should be stored in the buckets.

Hand Cleaner Drying Tissue SignageInspector note: The hand sink in the basement was missing proper signage towels and soap. The hand sink must be properly equipped at all times.
