Separation Segregation Cross ContaminationcriticalInspector note: Clean dishes and trays run through the dish machine were observed behind the faucet handles of the adjacent/adjoining hand sink and around the basin of the hand sink. When washing hands soap water and soil from the hands can and were observed to splash onto the surface of the clean utensils. Utensils should be stored an adequate distance to protect them from cross contamination.

Food Contact Surfaces CleancriticalInspector note: Dishes and equipment run through the dish machine for an unknown period of time have not been properly cleaned and sanitized. The detergent container (red supply line) was empty. The sanitizer line was dry. The health agent was unable to properly prime the line. Staff must inspect and confirm proper operation of the dish machine each day. Whereas the establishment does not have a three-basin sink when the dish machine is not operating properly the establishment MUST close. A service call was placed to service the machine. Suburban the service company stated that the machine would be repaired today. The health division will confirm.

Food Contact Surfaces CleanInspector note: Whereas there is no documentation as to how long the dish machine has been malfunctioning all food service equipment and utensils in use and storage should be run through the dish machine for proper cleaning and sanitization.

Food Utensil StorageInspector note: An ice scoop was observed on top of the basement ice machine. The top of the machine is not clean nor is it sanitized. As such the ice scoop should not be stored on top of the unit. It should be stored in the ice or within a container that can be cleaned and santized.

Non-Food Contact SurfacesInspector note: If the refrigeration / freezer doors cannot remain closed without cords and wooden supports the doors should be repaired or replaced.

Dishwashng FacilitiesInspector note: The dish machine was not operating properly during the inspection. The bulk container of dish detergent (red line) was empty. The sanitizer line was empty. The health agent was unable to successfully prime the sanitizer line.
