The ice wells must be cleaned and sanitized. The bar staff must be properly trained. The ice well beside the entrance of the bar cannot be utilized for the storage of glass bottles cash boxes and other items that are not properly cleaned and sanitized. Glass is never to be stored within the ice wells.

    Inspector note: Mouse droppings were observed within the kitchen and basement. Flies (drain and possibly fruit) were observed throughout the bar area. At least 30 flies was observed on the wall above the dish machine. A small cloud of flies was observed around the beer bottle and spent keg storage area. Flies were observed throughout the exterior bar area. At the reinspection BISD must be provided proof of pest control an Integrated Pest Management plan addressing the mice drain fly and house fly infestations. Progress to mitigate the infestation must also be demonstrated. If the exterior bar area cannot be maintained free from house flies then the Health Division may have to evaluate continued operation of the exterior patio bar.

    Inspector note: Grease food and other debris were observed beneath the two fryers in the kitchen. Within the basement a grease-like substance was observed on the floor beneath the kitchen. A rotted mouse was observed on the floor in the corner of the storage room in front of the office. Puddles of water and / or liquid (beer and other) were observed on the floor of the walk-in refrigerator. Water was observed on the floor within the room containing the hot water heater. Broken glass was observed within the beer bottle storage area. Beverage spills garnishes straws and bottle caps were observed on the floor within the main bar. All of these floor areas must be cleaned.
