Cold HoldingcriticalInspector note: Cooked pasta in the 2 door deli style cooler with an elevated temperature of 57F. PIC Mike stated that the pasta had been in the unit from the previous night. Pasta that was out of temperature for an extended period of time was voluntarily discarded at the time of the inspection. Ensure all potentially hazardous foods are being maintained at below 41F. Sliced raw peppers and onions observed being left out at room temperature. Discontinue and store all potetnially hazardous foods at below 41F. Peppers and onions were removed at the time of the inspection and placed into a refrigeration unit to maintain a temperature of below 41F.

Improper Maintenance of FloorsInspector note: Floor under the 4 top burner visibly soiled. Clean to remove. Floor in the back changing room used for employees with evidence of heavy rodent droppings. Clean to remove. Back room used by employees to change and store belongings with evidence of moisture and debris. Clean to remove all excess water and debris. At the time of the inspection there was no evidence of any pipes leaking.
