If items are to be hung within the walk-in the food items should not contact items that are not routinely cleaned and sanitized (buckets of food storage shelves and the sides of the walk-in). Store the hanging items above and away from potential sources of contamination.

Improper Maintenance of FloorsInspector note: Heavy grease was observed within the rear grease storage area to the left of the walk-in. The floor should be washed to remove the grease. The grease is a potential food source for pests. The floor of the walk-in and around the fryers should also be cleaned to remove food soil and grease.
