    Inspector note: OBSERVED ONE OF THE EMPLOYEE PREPARING BREAD,WENT TO THE EXPOSED HAND SINK,TOOK SOME PAPER TOWEL AND WIPE HIS HANDS WITHOUT WASHING HIS HANDS WITH WATER AND SOAP AND WENT BACK TO PREPARE THE DOUGH FOR BREAD. ONE OF THE LADY WHO WAS PREPARING THE DOUGH FOR BREAD DID NOT WANT HER HANDS ALSO. INSTRUCTED EMPLOYEES HOW TO PROPERLY WASH THEIR HANDS WITH SOAP AND WATER FOR 20 SECONDS BEFORE AND AFTER PREPARING FOODS. PROPER HANDWASHING SIGN WAS POSTED BY THE HAND SINK.CITATION ISSUED CRITICAL.
