    Inspector note: Observed improper hygienic practice. Observed food handler chopping/handling lettuce at salad station with bare hand contact. Informed manager that bare hand contact with Ready-to-Eat Foods is not allowed. Instructed manager to use barriers such as tongs or single-use gloves, whenever prepping/servimg or handling Ready-to-Eat Foods. Manager corrected violations during inspection. Voluntarily discarded and denatured 8 lb of chop lettuce, at a total value of $12.00. Critical violation #7-38-010 (A)

    Inspector note: Observed broken and cracked cooler door gaskets on pizza and sandwich prep reach in coolers. Instructed manager to repair/replace and maintain at all times. Observed excessive rust stains on shelving unit underneath connerton flat top grill and dish room prep table. Also observed rust and chiped paint on green wire shelving racks in the following area- -Wire rack across from cook line -Wire rack in dish room -Walk in coolers #1, 2 and 3 in basement dry storage area. Instructed manager to remove rust, reseal surface and ensure surface is smooth and easily cleanable. Maintain at all times. Observed deteriorating caulking and missing caulking along drain board in main floor dish washing area. Also observed black mold like substance embedded in caulk line of three compartment sink in basement drop storage area. Instructed manager to remove/replace/ repair and maintain at all times.
