MEANWHILE ALL UTENSILS MUST BE WASH RINSE AND SANITIZED AT 3 COMP. SINKS. DISH MACHINE IS TAGGED. INSTRUCTED TO FAX LETTER TO FOOD PROTECTION OFFICE AT 312 746 4240 TO HAVE TAG REMOVED AFTER REPAIR.
