Found cooked beef butt inside walk-in cooler at improper temperature. Found approximately 4-100lb containers at 44.5 F to 55.0 F. Manager stated that beef was cooked in the morning. However, temperature logs and proper cooling method was not observed. Instructed manager to rapidly reheat beef to 165 F, cooler from 140 F to 70 F within 4 hours and 70 F to 40 F within 2 hours. store in shallow container and ice bath before placing in w.i.c., cut meat in pieces to cool faster and must maintain cooling temperature logs. Critical citation issued 7-38-005(A).
