    Inspector note: Observed gyro meat (beef/lamb) on spit and exposed to ambient room temperature, without heat on. Instructed once potentially hazardous foods are on the spit (vertical broiler) the heat must be on continuously. Cooking process must be continuous and not intermitten, and no longer than 4 hours. Operator voluntarily discarded gyro meat from spit and will update process. Serious violation 7-38-005(a).

    Inspector note: Observed small amounts of black, brown, slimy, mold-like substances on 3 ice chutes on soda fountain in dining room area. Must detail clean and sanitize ice machine and chutes. Must maintain same. Observed excessive dirt build up bottom of pipe next to dry storage shelf in rear of kitchen (near entry to walk in cooler area). Must detail clean and sanitize. Must maintain same.
