List of potentially hazardous foods not meeting temperatures of 40F or less are as follows: Pork Pate at 47.8F, meat loaf 48.5F, Salsa at 47.4F, cut tomatoes at 48.9F, cut vegetables 49.5F, cooked chicken at 49.8F, Pasta 46.9F, Soft cheeses at 49.4F, etc...Mgmt discarded products at once, 120lbs, approximate value $1300.00.(air temp of cooler was at 41.5F).
