    Official wording: Food Protected During Storage, Preparation, Display, Service And Transportation
    Inspector note: Observed chicken on spit and exposed to ambient room temperature, without heat on. Instructed once potentially hazardous foods, such as chicken, are on the spit (vertical broiler) the heat must be on continuously. Cooking process must be continuous and not intermittent. Manager corrected during inspection by turning heat on, and discarding outer layer of chicken that was exposed to ambient air temperature. Manager will revise cooking process to include leaving heat on continuously once meats are on spit. Serious violation 7-38-005(a).

    Inspector note: Observed no labels on any prepped, potentially hazardous foods. Must label all potentially hazardous foods with name and prep date when stored in walk in coolers, or other prep coolers and held for more than 24 hours. Must maintain same.

    Inspector note: Observed excessive dust, dirt and food debris on floors under 3 compartment sink and in rear hallway. Must detail clean and sanitize. Observed items stored directly on the floor in walk in cooler and in prep area. Must elevate all items at least 6 inches above the floor, or on shelves in walk in cooler to allow for proper cleaning. Must maintain same.
