    Inspector note: The person in charge who is a certified food protection manager was not able to name any of the reportable symptoms or illnesses was not able to give the correct minimum internal temperatures for foods to be cooked to could not explain two stage cooling for the chicken fingers and chicken wings observed in the walkin refrigerator and was not able to set up the location's sanitizer to correct parts per million of chlorine. The certified food protection manager should be knowlegable about food safety illness policy and sanitization.
