PIC Performing DutiescriticalInspector note: Although PIC is knowledgeable about requirements a failure to ensure required temperatures for both hot/cold holding was found during Inspection as evidenced through the act of taking temperatures utilizing PIC thermocouple.(??????????).Please ensure CONSISTENTLY from within.This issue of temperatures has been discussed repeatedly between Health Department and various levels of Management at establishment.
