Provide proper licensure and submit detailed plans standard recipes and SOP's for preparation of gelato to health division. Establishment using an ice cream mixer and pasturizing machine to mix gelato. Provide cut sheets for all appliances used in preparation of gelato. Chef states pasturizing machine is used to melt chocolate. All pasturized eggs and cream used in preparation of gelato per CFPM on site. Provided frozen desert manufacturing handout to CFPM via email.
