(Peas discarded by manager) The items in the saute station are stored on ice and they are not in temperarature; spinach 52F steak 54F. Provide proper cold holding of 41F or below. (Production logs show that the items were on the line for under an hour and they were allowed to cool items and replenish with backups)

Food Contact Surfaces CleancriticalInspector note: The upstairs dishwasher is washing at 130F and rinsing at 205F. Provide proper wash temperature of 150F and rinse temperatures between 180-195F to ensure that items are properly cleaned and sanitized. (Items will be washed rinsed and sanitized in the three bay sink until the dishwasher is working properly).

Insects Rodents AnimalsInspector note: There are drain flies in a few areas. Provide treatment and work to eliminate standing water and other sources of food and water for pests.

PHF's Properly ThawedInspector note: The precooked frozen chicken pieces stored on the top of the pizza station refrigerator are 57F. The frozen pieces are heated in the oven for a short amount of time. Provide proper method of thawing items to minimize the time in temperature danger zones.

Installed and MaintainedInspector note: The handwash sink in the large warewashing room isn't turning on consistently. Repair. There are leaks under the sink and dishwasher in the large dishroom. Repair as any standing water is contributing to drain flies.
