Cold HoldingcriticalInspector note: Olives beans and cold slaw of 2 door deli cooler with temperatures of between 51-56F. PIC removed all foods that do not meet the minimum temperature requirement of 41F and below. Cold slaw had been in the refrigeration unit from the previous night and voluntarily discarded at the time of the inspection. Ensure all potentially hazadous foods are being maintained at below 41F.

Non-Food Contact SurfacesInspector note: Left side of 2 Door deli cooler maintaining a temperature of below 34F right side of 2 door cooler maintaining a temperature of around 46F. Address and repair unit if necessary. PIC is aware of the situation and is continuosly taking temperatures and rotating product to ensure a temperature of below 41F is being maintained. Tin foil being used to cover lower shelf of preparation table in main kitchen area. Discontinue and ensure all surfaces are maintained cleanable durable and smooth.
