Manual and Mechanical Warewashing Equipment Chemical Sanitization-Temperature pH Concentration and Hardness (P)criticalInspector note: At the chemical warewashing machine at the bar closest to the kitchen tested 0ppm after multiple cycles run with the sanitizer bottle being full and even with the priming switch being activated. The other chemical warewashing machine at the bar tested 50ppm and the staff were instructed by the person in charge to only use the properly functioning warewashing machine until the other unit can be repaired; chemical sanitizer solutions should be at recommended ppm of manafacturer.

Backflow Prevention (P)criticalInspector note: At the prep sink there is a direct connection to the waste water system; have a licensed plumber pull proper permits and install an air gap at the prep sink.

Using a Handwashing Sink-Operation and Maintenance (Pf)Inspector note: In the upstairs server nook observed dumped ice in the handwashing sink basin; handwashing sinks should only be used for hand washing.

Controlling Pests (Pf)Inspector note: In the first floor kitchen underneath the stairs leading to the second floor throughout the basement on multiple nonfood contact surfaces and on the floor of the electrical closet observed small dark rodent droppings. The pest control report from 7-7-2026 states that five mice were caught on traps and suggested cleaning of the areas observed during today's inspection of the rodent droppings. Have your pest control operator perform a service and as many services as required to provide a pest control report with no activity no observations of pest activity and talk with the pest control operator about looking for entry points in the basement and sealing them and clean and sanitize all the surfaces observed today during the inspection of rodent droppings. Currently pest control is on a monthly service and as needed; per a phone call with the Health Director and the person in charge we suggest increasing to a weekly or higher frequency of pest control service until the pest activity decreases then moving back to a monthly service schedule. Provide new pest control report to isdhealth@boston.gov
