CoolingcriticalInspector note: The tomato sauce in the refrigerator is cooling with three trays covered and stacked in the cooler. THe temperature was 64F and after fifteen minutes the temperature was still 63F. Provide proper cooling of 140F to 70F in two hours (this is done in the blast chiiler) and then from 70F to 41F in an additional four hours (this is usually done in the walk-in cooler.)
