    Inspector note: A spatula was placed within the hand sink at the end of the kitchen line. The spatula was removed and the Chef will address the violation with his staff upon the conclusion of the inspection. Whereas bacteria viruses food soil and other debris is washed from one's hands into the sink basin the sink basin is the last place a spatula and/or any food contact utensil should be stored/placed.

    Inspector note: The internal plastic finish to the main kitchen's salad unit is starting to crack. Several small holes were observed along the door frame of the unit. The interior should be repaired.
