Inspector note: Observed the employee in the warewashing area performing cleaning duties with soiled water in the first compartment soapy water in the second middle compartment and sanitizer in the third compartment; the person in charge should ensure that staff are trained properly to ensure that food contact surfaces are cleaned washed and sanitized properly. The Health Inspector had the person in charge stop the employee drain all three bays of the sink clean and sanitize the area then set up the sinks properly.
