(A)(1) Time/Temperature Control for Safety Food Hot and Cold Holding (P)criticalInspector note: White rice 127F Pork in sauce 111F and Roasted chicken 122F. PIC reheated all three. As discussed this hot holding unit will need to be able to keep the food at or above 135F. Maybe provide covers for each container and ture unit higher will help with temperature control.

Manual and Mechanical Warewashing Equipment Chemical Sanitization-Temperature pH Concentration and Hardness (P)criticalInspector note: Witnessed staff washing equipment without sanitizing. PIC will need to review with staff to have all three bays set up so equipment can be properly washed rinsed and sanitized as discussed.

Wiping Cloths Use Limitation (C)Inspector note: PIC will need to provide a sanitizer bucket to store wiping cloths in so not to pile up on prep table.

Ventilation Hood Systems Filters (C)Inspector note: PIC will need to have the filters on the cooking line cleaned. Also have the hood cleaning company out to clean the hood to the roof and provide a new sticker. Hood sticker expired June 2022.

Drain boards (C)Inspector note: PIC will need to review with staff to store soiled equipment on drain boards or an area that is for soiled equipment. Discontinue to pile up in was and rinse bays. PIC corrected at this time.
