    Inspector note: The HACCP plan is missing some information there is no recipe for the sushi rice calibration procedures corrective actions etc. Submit an updated HACCP plan to the board of health for approval. The sushi rice tested at 4.4 originally. The sushi chef was unable to take corretive action. After the meter was calibrated and the sample was prepared properly the sushi rice tested at 4.1 the lab test has a result of 4.0. The logs have sushi pH values of to the hundreth but the meter only tests to the tenth. Provide accurate logs and train sushi employees in updated HACCP plan procedures.
