Cold HoldingcriticalInspector note: American cheese holding at 48F-50F.Chicken salad made onsite also holding at 47F-48F.(Staff not sure on how to calibrate metal stem thermometer so I'm not sure staff is accurately monitoring time/temperature requirements that they are responsible for.Inspector has reviewed proper procedures with PIC).
