Spoke to the PIC and recommended not over filing the food grade containers. Removed 1/2 of the food items and placed back into the refrigeration unit.

Observed soiled hand sinks clean and sanitize interior of hand sinks. Observed soiled kitchen equipment in the prep area- prep table under the prep table flip top refrigeration unit microwave hood filters shelving. Clean and sanitize all kitchen equipment.

Hand Drying Provision (Pf)Inspector note: No paper towels at the hand sink in the prep area or downstairs near the 3 bay sink. Provide means to dry hands.

Controlling Pests (Pf)Inspector note: Observed rat droppings and a strong smell in the lower area of the restaurant. The droppings are behind furnace under the shelving and on the shelf over the ice machine. PIC was able to provide a pest report 3/4/26. The report does not have any notes on the report. The 2/18/26 report states 2 catches. PIC stated that the extermination company comes once a week. Photos taken. Provide a detailed IPM report the report must be free and clean of activity and catches. Remove all rat droppings. Provide a plan to ensure all holes and voids are addressed.

Floors Walls and Ceilings-Cleanability (C)Inspector note: Observed heavy grease build up on the floor under the stove and cook line. Degrease floor under kitchen equipment to remove the heavy grease build up. Observed dropping and heavy soil build up under the chemical shelving at the bottom of the stairs. Clean floors and remove everything off of the floor and store 6 inches off the floor. Observed worn grout lines in between the tiles in the cookline area. Provide grout to all tiles to ensure no food grease and water can lay stagnant. Observed holes in the wall near the 3 bay sink. Repair walls.

Outer Openings Protected (C)Inspector note: Provide door sweeps to both exterior front doors. Ensure 2nd door is closing properly. Ensure no daylight is coming through the bottom of the doors.
