Location AccessiblecriticalInspector note: The area around the hand sink servicing the front counter and rear preparation room was cluttered. Equipment stored immediately around the hand sink is susceptible to cross contamination. The equipment also limits ready access to the hand soap towels or faucets. As such the sink area should be kept free at all times.

Food ProtectionInspector note: A bowl of raw chicken was observed above a covered pot of marinating hard boiled eggs. Raw food items such as chicken should always be stored on the bottom shelf. As discussed during the inspection staff should store the most hazardous items with the highest cooking temperatures on the bottom of the refrigeration unit. Fully cooked / ready to serve food items should be cooked on the top. In general food items should be segregated and stored in the refrigerator by cooking temperature.
