Characteristics-Materials for Construction and Repair (C)Inspector note: Metal shelving racks in the kitchen used to stored clean p;ates and cups appear rusted in several areas - shelving units in the walk -in are compromised in several areas - repair resurface clean to remove all compromised areas or replace entirely as we discussed during inspection

Equipment and Utensils-Durability and Strength (C)Inspector note: Single door Blodgett oven on the cooking line is not maintaining the proper temperature - it keeps fluctuating during operation making it difficult for staff - oven appears worn and compromised - repair or reeplace as discussed moving forward - The exterior of the ice machine has broken and / or missing sections including some damage to the lid - ice is considered food and the interior of the ice machine would be a food contact surface - replace all compromised parts or replace the entire machine itself as discussed during inspection

Good Repair and Proper Adjustment-Equipment (C)Inspector note: Warewashing machine from Ecolab on site is visibly worn and is in need of replacement - PIC stated that he has been in contact with the company -and was told that a new machine is on order and should be available within the next few weeks or so
