Cooling Heating and Holding Capacities-Equipment (Pf)Inspector note: IN kitchen I found again covered containers of cooked foods. PIC i is going to continue this should provide a hot holding cabinet for the back stock food for the front counter. Food can not just be at room temperature.

Hand Drying Provision (Pf)Inspector note: PIC will need to besure that hand sink shave paper towels. One sink did not have any. Provide and monitor.

Food Storage Containers Identified with Common Name of Food (C)Inspector note: Besure all bulk food containers have labels small or large.

Thawing (C)Inspector note: A container of chicken thawing in a water. Thaw as discussed under running water in prep sink defrost the day before or cook frozen.

Nonfood-Contact Surfaces (C)Inspector note: Clean exterior of bulk food containers. General cleaning of the shelves in the kitchen.

Ventilation Hood Systems Filters (C)Inspector note: Clean hood filters on cooking line visibly soiled. Hood stickers are expired (Nov 2022) please have both hood cleaned before re-inspection.

Drain boards (C)Inspector note: PIC has to have an area to store soiled equipment. Discontinue to use the floor grease trap in the three bays of the sink and end of the prep table. Provide a cart or table just for soiled equipment. Three bay sink will need to be set up before any equipment can be washed and can not do that if filled with soiled equipment.

Floors Walls and Ceilings-Cleanability (C)Inspector note: Clean floor under and behind cooking equipment.
